Methionine

An essential amino acid; one of the twenty building blocks of proteins. Present in nature in egg albumin and other proteins. Along with cysteine, one of two amino acids with sulfur groups. Methionine is usually the leading amino acid in proteins, but is often removed by an enzyme before final assembly.
